On another note. How are these stories usually started? *Is thinking about it starting with him pretty much getting off a ship and onto the island at the orders port. And then writing about him leaving and taking the road.*
The order doesn't have much territory enough to own a port, due to Atlantis' overwhelming ocean presence. The most you'll see are small time ships owned by individual towns of derps who were silly enough to trap themselves on a wooden box in an ocean filled with aquatic mamono.
Arrivals from overseas are often people who lost their way or were silly enough to sail along the path that ships were reported to always go missing on.

Mhm...Yes. Is there any lore or special places on the island that the map doesn't list? Or could we end up finding such things like a old ruin or castle and it gets added to the map at somepoint?
I've listed most of the major locations. If another one gets discovered, I shall list it. But there's also a lot of small things on the map that aren't significant enough to be worth using as a dot on the map. Places discovered like the ruins where Grave's mother died are significant because it's large, and because it belonged to a (now defeated) faction.
Do other characters from other stories ever interact with each other? Like, for example. Would your character ever come across mine in a town or the like?
Characters often bump shoulders, perhaps half of the time without the players themselves realizing it because the world is viewed through the character's eyes, and they don't know the significance of another PC before them. Oftentimes, they're just passed off as NPC's.
In one upcoming case, two players will meet together for a significant event. Their threads will still be separate, but they will be interacting with one another in their own separate threads (this allows each player to just check their own thread, instead of having to check the other player's thread so that they get only their own character's perspective.)
