Anyone know/have a list of CoC type games? And are there any that feature bestiality as main/prominent content? All the text adventures I know are furry or super vanilla for my tastes.

Unfortunately not. The only game I have found that has some sort of bestiality (1 enemy - wolf) is Flexible Survival but it is very furry...more so than CoC. It's playable though because you can toggle fetishes and I prefer playing a human female character that gets violated by a variety of creatures.
The biggest text games are all furry unfortunately and they all ban bestiality as a fetish for some reason.
Hell more so than furry it seems nearly every text game is built around mind-control or transformations, I'd really just like a game along the lines of 'A Dance with Rogues'.
Big issue is also that most text games revolve around nothing BUT sex which kind of removes the whole point of interactivity, if all your game essentially offers is a choice of which bit of text to read it's not much of a game so much as an interface to a nexus of short pornographic stories.

You might be interested in Seeds of Chaos. It isn't at the point of development where it becomes a VN/text game hybrid yet (still one more release away), but all the explore events are very much in the vein of second world fantasy. Unlike the CoC/TiTs meet (or fight) and fuck events, events in SoC are like the traditional non-combat wilderness encounters of pen and paper. You'll meet NPCs, find treasure and places of interest, get caught in traps, and face off against monsters (of the non-sexy variety for the most part). There's still sex, of course, but you'll visit NPCs at specific locations when you want to trigger scenes, as opposed to it being sprung on you all the time.
I wouldn't bother, its a pretty bad game which has even more emphasis on furries. Besides the only bestiality you can encounter is a wolf enemy judging from its wiki.
You can try it on swfchan if you want to make up your own mind though. Saves you the effort of having to make an account on furaffinity.
I tried it and it wasn't for me, didn't seem worth commenting at the time since my complaints are largely personal.
Essentially I enjoy the notion of simple, rough sex without bollocks, and in your game the rough sex was just a bunch of petty denigrating and namecalling, something I got more than enough of playing MGQ. I can understand some people find that appealing but I just don't, I really care nothing for what people think of their sexual partners as it takes away from the act, similar with NTR just being a waste of time as I care little for the psychological warfare unless it's a conquerable obstacle.
In summary it comes down to the following; watching someone take a one-sided psychological beating for whatever reason is incredibly off-putting to me, it just clashes with my rather combative personality >_>
So yea, I wish you all the best with your work, but it's not for me.

As I recall the wolf is more furry than bestiality as well, as it casually strikes a conversation with you and politely asks if you're willing to have anal sex.

There's Slablands, it was started as an option for people that don't like CoC. The idea is that no furry is allowed and there's going to be less focus on the player getting dommed constantly or by surprise in scenes. No bestiality though, most of what I remember was monster girls.
Early in development and not many scenes, the prologue is mostly lore and after that some exploration and battles. If you're interested go check the thread on /vg/.

I tried this last night on your recommendation. Not bad, actually. Feels kinda short and basic in some ways, but it has a very interesting gimmick and the pacing is pretty excellent.

I intended to give this a shot last night, but it looks to be male protagonist and no character customisation, so I didn't end up bothering. Great visual presentation though.
There are a lot of mildly irritating tropes in the genre, you're not wrong. I think the thing you're referring to comes from the CoC guy wanting to keep things "nice" wherever possible. Like, thematically dabbling with some hard stuff but largely pulling away from anything too dark.
Bounty is quite the breath of fresh air, but it's pretty bare-bones. It's one of the least likely to flinch away from some real conceptual darkness though of these suggestions. Updates aren't super frequent and replayability isn't huge at this stage, that might change later down the road as we get more complexity.

Slablands has a lot of CoC's problems with being too worried about any thematic darkness turned up to eleven from what I could see. Scenes are rare enough as to be non-existent and it generally feels more like any old fantasy text game with a couple of possible sex scenes than any kind of H-Game, so to speak. Underwhelming, but very well crafted.
I was so disappointed by Trials in Tainted Space. It sucked any momentum out of CoC for a start, but the game itself was just...I don't know. How to explain it?
It felt like they just didn't understand what made CoC actually a good game. At least, subjectively and in my opinion of course. The furry angle was pretty overwhelming in CoC but it's basically all there is in TiTS almost to the point of self parody. The whole dungeon-exploration and town exploration thing just felt like an over-designed mess.
But mostly, it's the pacing. From what little I played, there was just no subtlety or progression, it's just wall to wall hardcore fucking right from the tutorial. CoC is no masterpiece, but it has a feeling of exploration and progression that goes beyond "you level up" with events slowly building and threats getting progressively more major and the content itself having some feeling of starting in a different place to where it ends up.
It's like the content for TiTS all just vaguely scifi spins on the furry-heavy latter-day content for CoC. Some of the writing might be okay, but it's all just so...weirdly one note.
TiTS is shitty because all the content is linear. Like, in CoC you had to progress through the main storyline, but you could go and find the rest of the areas to go fuck around in and pretty much could just ignore the story line for as long as you wanted. TiTS gates areas and even levelling up IIRC behind the storyline, so if you lose your save you have to slog through ALL of the bullshit all over again.
It doesn't help that the added map-movey system just makes it more annoying to navigate to places, or that the combat is kinda fucky, especially with how they tie most of your cool abilities to your Fatigue... which depletes when you do the sex and generally only has enough for like 2-4 uses if you blow the entire lot of it in one combat, and shit.
There's also like nnnnnone of the stupid TF stuff that was really the draw to CoC in the first place, except behind fucking ~retarded~ expensive mods you have to get at the stores.
You could take a poke at the original thing that inspired CoC. The first page link is dead but there seems to be a reup on the last page. It's not nearly as fleshed out as CoC is, but hey.

I think there were a couple enemies that count for beastiality, but it's definitely not the focus.
Fall of Eden:
Fenoxo's website has Fall of Eden on it, if you haven't poked that. Its development is on hold because of Reasons, but I remember it being pretty decent. TF content seems to be pretty light, but it has a pretty neat rpg flavor and it gives you an elf waifu to totally bully. Still mega fuckin' furry though.
Tainted Elysium:
There's Tainted Elysium which has at least two threads here on Ulmf. It looks to be more scifi, but it's SUPER early indev and there isn't really any content right now. It perhaps oversimulates things a little bit, but hey. Re: Beastiality, there's a couple encounters with various alium/monsters. I think there's a cumfacehugger, a dongwasp and a slime currently implemented.

So far as I understand it's a little framework dealie. There's a bit of content in there that I remember, but you'd have to poke at it yourself to find out what it's like, because I poked it ages ago.
Niburi:
This looks vaguely like a text adventure gaem. I haven't looked at it at all, though, so.

IIRC, this is basically just a daily life simulator set in modern times, where you're either TF'd into a girl or (more mundanely) start as a girl, and just play through a year of trying not to suck at work, clubbing, and shacking up with a guy. No grand adventure like CoC, but it's kinda nice.

The download link seems to still work, amazingly. One of the original Not-CoCs, died in 2013 ripip. It had some pretty lewd stuff, like the spooky futaghost, but I can't particularly recall any beast content. Maybe out on the road.
I can also recall at least two text adventure games besides these... one actually had a graphic for your character that updated when you equipped stuff, and the other was this kinda grimy-feeling fantasy one. Both of them looked REALLY good. Sadly, I cannot remember their names, though I think I remember reading that the former stopped development.
ACTUALLY I LIED the former was Euphorian Tide, I think. It used to be hosted on a site, but now it's not. There's a download, though!

I super fuckin' can't remember the other one though, rip.
