Edit: Use the cheat menu plugin, and kill her with that. She's the only broken boss.

First boss is broken, accidentally buffed her level I guess. Use the cheat menu plugin to kill her, she's the only bugged one.

You can also transfer your save, to the demo nearly oneshot her. If you've been doing just a little grinding. Transfer save back to the actual game. And be on your merry way

Do you mean Cheat Engine, or another program? Cheat engine doesn't seem to work with this.
