Think he's looking more for 'what should I build' than a list of what each upgrade does and to that end:
Increasing size seems to be one of the more attractive options, get better attack + better defense + the fear you create goes up (actually had knights come call me out of my lair, only to run away the first turn of the fight and get slaughtered).
Wings are certainly useful, however you can emulate their effect (going into the sky, not sure about flying into the city, certainly doesn't work with the final battle and the airships though) with magic, so it's a bit of a toss-up, take them over the less desirable upgrades like gills/legs.
Better scales seem to be a must. Along with that some kind of natural weapon i.e. sting tail, claws, jaws.
Take at LEAST 1 magic upgrade, you can sell loot for more money to the jeweler in the city, also allows you to go after the elven grove, and the impregnator spell lets you knock up gaints/elves/merwomen before you're supposed to be able to, plus you can give yourself different breath weapons and elemental immunities (kind of a crap-shoot because you never know EXACTLY what you'll be fighting) and all your spells last untill you go to sleep.
That's about it all the suggestions I have from my experience.
With that done, has anyone EVER caught a thief with a trap? Magical or otherwise? For me it's either been guards or they knock over some gold and I eat them in the end.
