Thanks for letting me know what those stats were for, I'd been wondering for a while. Pretty sure I trashed the slime (Or whatever it is you do when you trade them for EXP for Lena). I was using one I caught in the wild. The starting stats vary, but it's not random, at least not so far. I did several dozen runs of the Harpy stage to level my caught monsters for testing, and I noticed the fuzzballs have a set number of different stat setups based on HP. They had 11, 13, 15, or 17 mostly, occasionally one would have 18, and I think I saw 19 once. I assume there's a template or something similar that has a set number of classes drawing from it when spawns are determined.
As far as stats averaging out, I can't speak to that due to only raising a single copy of each monster. They might, or the growth rate might be fixed and the only thing that matters is which version of the monster you happened to get.
Unique characters are probably different. Nono (Corgi Knight), the alchemist girl, and the dragon-loli don't need more than one set of stats, so they could have a single fixed start point and growth rate. This could be tested by posting the stats for your version and checking against someone else who has them at the same level. If the Harpy is a unique boss, I assume she'd be the same. If she's not, then she'd follow the previous example with the "random" stat draw.
Lena herself almost certainly has a preset start point and growth rate for stats.
One final thing I noticed - Spells can vary as well. A lvl 13 Fuzzball could have the basic lightning attack, but another wouldn't. Spell variance would be a much more significant concern than stats on capture if you wanted to raise a favorite.
Do you happen to still have the "training" slime you start with? It has a different name (and all 0 stats) so I'm wondering if it's worth training it up for a unique skill or something.
Also, one of the Green Apples I caught had 25 HP instead of 16 at the same level, so I wonder if you can just get wildly different stats after raising several. Skills also seem to vary a bit, too.
By the way, 命中 is Accuracy and 回避 is Evasion. Skills have an Accuracy modifier, so that's more important than your actual stat. Don't ask me about anything else on the stat screen, though.
