Given undead can't get negative levels, they'd still need a living source to feed from every few days. Not that the Jiang-shi is a vampire per say, they've more in common with liches.
But undead with feeding structures generally have to do so or they start to go insane, and into Torpor if they don't feed. We'd have a 1 week grace period but after that, you've got an increasingly scaling up dc of checks or you start taking stacking penalties. A wight has to deliver negative levels, a ghoul feeds, a vampire drinks and so forth. Undead with no such structures like skeletons, zombies, mummies, ghosts, grave/deathknights etc don't have to worry about it but the others do. A week isn't so bad but if you want to maintain an eternal vigil without a bunch of your members running off on munchy runs, you'd need to accommodate them. Ghouls are easiest cus they just want rotting meat and that's pretty easy to get. Ghouls also are naturals at blending into civilization and thus can easily hide indefinitely in a human city.
I've a ghoul vigilante ranger char who does just that, using disguise checks and civilized ghoulishness to appear human, fights with a sword, and buys offal the butchers were gonna throw away anyways "for her dogs". And then switches in her claws and fangs when in vigilante mode.
