Yonkers would be the logical choice (Or that college the students barricaded... can't remember the name of it), but I think it'd be more interesting if they shot it more like the book was written: in documentary style. I know that doesn't fit into the Hollywood mold, but I feel that's all about what the book was about, taking many different "human" stories and how each little piece fit within a global pandemic.
True, but with the short time span of a movie I'd prefer they focus on one story. Now if they were doing a 'walking dead' style TV series, they could go full documentary like. It'd be pretty neat, and I can even see it working in a PG-13 setting if made like a documentary.

I dunno, they could do a mockumentary in the span of a movie. It they did it right.

The one or two story approach is the safer one by far.

Watching Brad Pitt gallivanting around the globe like any other summer blockbuster; that's just retarded.
